This dialog looks completely different in Quicktime 7 than in previous versions. In Quicktime 7, you just need to click on "Video Track" to select it. If you have an earlier version, you should find the video track on a pulldown menu on the left side of the dialog. Once you find the video track and select it, move to the next step.
